Breakfast with Aliette

Confusion 2021 is excited to bring you ‘Breakfast with Aliette’. Once again, Aliette de Bodard has offered to do one of her famous cookery demonstrations – but this time, you CAN try this at home if you wish!

For this Saturday-morning session, Aliette will make delicious Bò búns or mixed summer rolls.

The ingredients you will need to hand are:

Bò bún for 2 people

  • 220g beef
  • 160g bún noodles (rice vermicelli)
  • 2 shallots, chopped
  • 1 tablespoon nuoc mam
  • 2 big garlic cloves, chopped
  • 1 stalk lemongrass
  • 1 tablespoon sugar
  • 4 sprigs mint leaves, or to taste
  • 4 sprigs coriander, or to taste
  • 80g bean sprouts, washed
  • A handful roasted unsalted peanuts
  • 4 big salad leaves
  • Nuoc cham dipping sauce, to taste

Dipping sauce

  • Basic measuring unit: juice of one lime
  • 2 units of nước mắm
  • 2 units of sugar
  • 4-6 units of water
  • 1 garlic clove, chopped into small pieces
  • 1 teaspoon of chilli garlic sauce (Aliette uses Lee Kum Kee, which is medium hot, since the point isn’t to take out your taste buds)

Mixed summer rolls
As above for Bò bún, but substitute the rice vermicelli with 4 x bánh tráng (rice wrapping paper) per person.
